Garlic Pasta (Pasta di Aglio)

Ingredients

  • 1 bulb of garlic, diced or pressed
  • 1 lb angel hair pasta or pastina
  • 1 tablespoon olive oil
  • Pinch of salt
  • Dash of black pepper
  • Grated cheese, for serving (optional)

Instructions

  • Prepare the garlic:
    In a skillet, heat the olive oil over medium heat. Add the diced or pressed garlic and sauté until fragrant and lightly golden. Remove from heat and set aside, do not let the garlic burn.
  • Cook the pasta:
    In a large pot, bring salted water to a boil. Add the pasta and cook for 6 minutes, or until al dente.
  • Combine garlic and pasta water:
    Before draining the pasta, reserve about ½ cup of the cooking water. Ladle that ½ cup of the hot pasta water into the garlic skillet. Stir well and return to low heat to continue gently sautéing.
  • Season:
    Add a pinch of salt to the pasta pot and a dash of pepper to the garlic mixture.
  • Toss together:
    Drain the remaining water from the pasta and add the pasta to the skillet with the garlic mixture. Toss well to coat.
  • Serve:
    Transfer to serving plates and sprinkle with grated cheese, if desired. Serve hot.
