WAIT! It’s called Frittata & we never knew!?!

We’ve been married for 33 years, and for over 50 years, I thought my Ma’s famous recipe was just called “Potatoes and Eggs.” We literally filmed this entire episode calling it that… only to sit down with a glass of wine afterward and realize we’ve been making a classic Italian Frittata the whole time! I even published it under the wrong name in my cookbook!

Watch until the end to see if Michael can nail Ma’s legendary giant pancake air-flip, and see my husband’s honest (and noisy!) tasting reaction.

Ma’s Potato & Egg (Frittata)

Ingredients:

  • Potatoes: 6 medium potatoes, cleaned and thinly sliced
  • Eggs: 6 large eggs, whisked
  • Seasoning: A pinch of salt and a dash of black pepper (to taste)
  • Cheese: ¼ cup grated Pecorino Romano cheese
  • Aromatics (Optional): 1 small onion, finely chopped
  • Cooking Oil: Generous amount of olive oil (enough to coat the pan well)

Directions:

  1. Fry and Layer the Potatoes: Heat a generous amount of olive oil in a large frying pan over medium heat. Add the sliced potatoes and fry until they are completely soft and cooked through. Arrange them so they lay flat, evenly covering the bottom of the pan. Add the salt and pepper.
  2. Prep the Egg & Onion Mixture: While the potatoes fry, whisk the 6 eggs in a bowl. Stir the finely chopped onions, and grated Pecorino cheese directly into the eggs.
  3. Pour and Set the Base: Pour the egg, cheese, and onion mixture evenly over the flat layer of potatoes. Let it sit on medium heat without stirring. You want the bottom to cook into a solid, golden crust that holds everything together.
  4. The Flip: Once the bottom is firm and golden, it’s time for the big moment! If you are brave like Ma, you can flip the entire giant pancake right into the air. But if you’re like Michael in this video, you take the safe route: slide it onto a large plate, flip the pan over the plate, and slide it right back in!
  5. Finish to Golden Perfection: Continue to fry the second side on medium heat until it is fully set and a beautiful golden brown on both sides. Slice it like a pie and serve hot!
